We ate at Cracker Barrel today and I had the best grilled tenderloin, quite a bit of it, and it was only 4 points. That let me to do an Internet search for some chicken recipes. This one caught my eye. I'll be trying this one this week. I'll let you know how it turns out!
Weight Watchers 4pt. Diet Cola Chicken Recipe
Ingredients
1/2 c sliced onions (optional) .
1 diet cola .
4 boneless skinless chicken breasts .
1 c ketchup
Directions
Step #1 In a skillet, mix ketchup & cola.
Step #2 Add chicken & onions.
Step #3 Bring to a boil & cover.
Step #4 Reduce heat to medium & let cook for 45 mins.
Step #5 Remove lid & let simmer until thickens.

Double Layer Pudding Pie
5 Minute Double Layer Pudding Pie
5 Points Per Serving on Weight Watchers
1 1/4 Cups cold skim milk
2 pkgs. (4-serving size each) Jell-o Instant pudding, any flavor
1 tub (8 oz.) thawed Fat Free Cool Whip whipped topping, divided
1 Reduced Fat Keebler Ready Crust graham cracker pie crust (6 oz.)
Beat milk, pudding mixes and 1/2 of the whipped topping in bowl with wire whisk 1 minute. (Mixture will be thick.) Spread in crust. Spread remaining whipped topping over pudding layer in crust. Serve immediately or refrigerate until ready to serve.
Makes 8 servings

Parsley by the Bunch
Recently I asked David to go get me some fresh parsley from the grocery store. It comes in a "Huge" bundle for like 79 cents. So I'm going to try this one!
PARSLEY POTATOES
3 med. potatoes
2 tbsp. butter
1 tbsp. chopped fresh parsley
Pare potatoes. Cut into 3/4 inch cubes. Put in 1 1/2 quart casserole dish with 1/4 cup water. Cover with plastic wrap. Cook on high 7 to 9 minutes or until potatoes are soft. Stir once during cooking. Sprinkle with parsley and dot with butter. Serves 4.

Sugar Free Frosting
"The Preacher's Wife" stopped by for a sugar free frosting. Here is one I found. I haven't tried it, but it sounds good.
Sugar-Free Frosting
Prep Time: 30 Minutes
Ready In: 30 MinutesYields: 12 servings
"Versatile cream cheese frosting flavored with sugar-free instant pudding. It will frost one 9x13 or one 2 layer cake. Use any flavor of pudding mix."
INGREDIENTS:
1 (1.4 ounce) package sugar-
free instant pudding mix
1 3/4 cups milk
1 (8 ounce) package cream
cheese
1 (8 ounce) container lite
frozen whipped topping,
thawed
DIRECTIONS:
1.
In a medium bowl, combine pudding mix and milk. Mix well and let stand until thickened.

In a large bowl, beat cream cheese until smooth. Add pudding and mix well. Finally, fold in whipped topping.

Dump Cake
I've not tried this but it sounds great..and I plan too! I'll let you know how it turns out when I get around to it!
Makes 24 -2" squares
1 can cherry pie filling
1 20-ounce can crushed pineapple, un-drained
1 package yellow cake mix, dry
1 cup melted butter
1 cup shredded coconut
1 cup chopped nuts
*Preheat oven to 350 degrees. Put ingredients in a 9" by 13" pan in the same order as listed.
DO NOT STIR. Bake for 1 hour at 350 degrees. may be served with whipped cream.
